For a Day Like Today

You know those days when...

the windows are open 
a cool gentle breeze is blowing in
sweet little birds are singing their songs
the house is spotless
the kids are well behaved all day
and they take amazing long naps
and you have time for yourself
to sip coffee and eat bon-bons
and your husband comes home on time
and you all spend a lovely family evening together
and all is peaceful and well

*enter real-life*
It's dreadfully humid and you switch the AC on
but you mutter to yourself (or out loud) about how much $ the electric bill is gonna be
and the only thing you hear coming in the windows is the neighbors' lawn mower/loud kids/the trash truck
that interrupts naptime 
and elevates the already overwhelming *whatintheworldiswrongwiththesenoisykids* volume level in the house
and would they please stop arguing and get along already?!
and didn't I just sweep that floor/vacuum that rug/pick up those toys/fumigate that boys' room/put that toilet seat down?!
and there's no end in sight because Daddy is coming home late tonight

I bet that sounds closer to what any mom's day looks like!

That was a really long introduction to say "I have a really great recipe for you!"

This seriously tastes better than a Rotisserie chicken and it's nearly as easy for a lazy busy mom!

Crock-Pot Rotisserie Style Chicken
1 whole (4-5lb) chicken, skinned (or don't if you forget like me!) 
2 tsp kosher salt
1 tsp paprika
1 tsp onion powder
1/2 tsp italian seasoning
1/2 tsp cayenne pepper
1/2 tsp black pepper
pinch of chili powder
4 cloves garlic
1 yellow onion, quartered

In a bowl, combine all of the dried spices and rub all over the chicken inside and out. Put the chicken breast side down in the crock-pot.
Shove the garlic and onion inside the chicken.
Cover and cook on high 4-5 hours or on low for 8.

If the baby happens to nap well serve with rice cooked with a packet of Sazon and toss in some frozen peas and carrots.
